If you want these for dinner make the dough early and let it sit all day so the sourdough starter can do its thing. If you want them for the morning then make the dough the night before and let it sit all night and let the sourdough do its thing.
First in your big bowl whisk together the 258 grams or (1 &3/4) Cups flour, and the 1/2 cup sugar. mix them together really well
Once mixed then add the 170 grams of sourdough start, 1 & 1/2 cups vanilla almond milk (or whatever milk) and 1 (one) tsp of real maple syrup
The reason you let the dough sit out all night/day is because this allows the sourdough starter time to do it's thing. It breaks down the flour and making it much easier to digest.
Now its time to prep to eat so now add to your pancake/waffle mix the following - your 2 eggs, your 2 Tbsp of melted butter, 1/4 salt, 1 more tsp of mayple syryp and mix it all together really well BY HAND. Truly the best way to bake it stir by hand
Last add the baking soda 1/4 or 1/2 tsp this adds to the less taste of the sourness BUT ALSO it helps with the light fluffy ness. Stir really well until its all stir together great!
Okay now that it's all mixed together well it's time to cook
Get your pan, skillet, waffle iron or what ever you are using and add a little butter to it so the batter wont stick.
Spoon in a 1/2 or 1/4 cup worth of mix and pour it on to the buttered pan.
Bubbles will begin to appear, When the bubbles start to cover the whole top, flip the pancake and cook the other side.
We got about 15 pancakes out of this batch.
